💡 Grandmaw's Tips

🌱 Watermelons need warm soil — wait until the ground is 70°F before planting. Cold soil rots seeds faster than anything.
🌱 Plant on a mound of compost-enriched soil to keep roots warm and well-drained. Grandmaw always planted hers on old compost piles.
🌱 Once fruit sets, slip a piece of cardboard or straw under each melon to keep the bottom from rotting on wet ground.
🌱 Stop watering about a week before harvest — a little drought stress concentrates the sugars and makes them sweeter.
🌱 The belly spot tells you everything. When it turns from white to creamy yellow, it's ready. The thump test is nice but the belly don't lie.
🌱 Tap it — a ripe watermelon sounds hollow, like tapping your chest. An unripe one sounds solid, like tapping your head.
🌱 For seed saving, let one melon get overripe on the vine. The seeds will be fully mature and dark. Rinse, dry a week, store cool.

Here's how to keep watermelon all year long.

🧊 Freezing (Cubed or Puréed)

Best for: Smoothies, popsicles, agua fresca, sorbet, slushies
💡 Frozen watermelon isn't good for eating as-is — it gets mushy when thawed. But for blending into drinks and frozen treats, it's perfect. Freeze cubes on a sheet pan first.

🥫 Water Bath Canning (Pickled Rind)

Best for: Side dish, relish tray, charcuterie board, holiday condiment
💡 Pickled watermelon rind is an old Southern tradition and one of the best kept secrets in canning. Grandmaw kept jars of it in the pantry year-round.

🫙 Watermelon Jelly (Water Bath Canned)

12-18 months
Best for: Toast, biscuits, gift giving, PB&J with a twist
💡 Juice the watermelon, add sugar, pectin, and lemon juice, and can it like any other jelly. It's pink, it's sweet, and people will ask you for the recipe.

🌞 Dehydrating (Flesh)

6-12 months
Best for: Snacking, trail mix, kid treats, smoothie add-in
💡 Dehydrated watermelon turns into chewy candy-like strips. Slice ¼ inch thick and dry at 135°F for 12-18 hours. It shrinks to almost nothing but the flavor concentrates beautifully.

🍷 Fermented (Watermelon Wine/Vinegar)

6-12 months (wine), indefinitely (vinegar)
Best for: Sipping wine, salad vinegar, cooking acid
💡 Watermelon makes a light, sweet wine that's easy for beginners. If it goes too far, let it keep going — watermelon vinegar is lovely in dressings.

🧂 Candied Rind

2-3 months at room temperature in airtight jar
Best for: Holiday candy, baking decoration, snacking, gift giving
💡 Simmer rind cubes in heavy syrup until translucent, roll in sugar, and dry on a rack. They look like jewels and taste like old-fashioned candy.

🧃 Syrup (Reduced Juice)

3-4 weeks refrigerated, 6 months frozen
Best for: Cocktail mixer, pancake syrup, dessert drizzle, flavored water
