🌱 No pasta machine? A rolling pin and elbow grease works just fine. Grandmaw's kitchen didn't have a pasta machine, and nobody complained.
🌱 If the dough is too sticky, add flour a tablespoon at a time. Too dry and crumbly? Wet your hands slightly and keep kneading.
🌱 Fresh pasta freezes beautifully. Toss cut noodles with a little flour, nest them on a sheet pan, freeze solid, then bag them. Cook straight from frozen.
🌱 Want to use just store-bought? No shame in that. A $1 box of pasta is still one of the cheapest meals you'll ever make.
🌱 Save a cup of pasta water before you drain — you'll want it for the sauce. Get in the habit and it becomes second nature.
🌱 Leftover dough scraps? Knead them together, re-rest 10 minutes, and roll again. Not one scrap gets wasted.
🌱 For silkier pasta, use 2 whole eggs plus 2 extra yolks. Use the leftover whites for meringue cookies or add to scrambled eggs.

1 Mound the flour on a clean counter and make a well in the center — like a little volcano.
2 Crack the eggs into the well with the salt and oil. Use a fork to beat the eggs, slowly pulling flour in from the walls.
3 Once it's too thick for the fork, use your hands. Knead for 8-10 minutes until the dough is smooth and springs back when you poke it.
4 Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature. This relaxes the gluten so it rolls out easy.
5 Divide dough into 4 pieces. Roll each piece thin with a rolling pin or pasta machine — about 1/16 inch for most shapes.
6 For fettuccine: roll up the sheet loosely and cut into ¼-inch ribbons. Shake them loose and lay flat on a floured towel.
7 Boil in salted water for 2-3 minutes — fresh pasta cooks way faster than dried. It floats when it's ready.
8 Toss immediately with your sauce. Grandmaw says: the pasta should never wait for the sauce — the sauce should be waiting for the pasta.

Best for: Long-term pantry storage, bulk buying
💡 If you stock up during sales, vacuum seal or store in airtight containers with oxygen absorbers. Dry pasta lasts nearly forever when kept dry. Buy it when it's 50 cents a box and stack your pantry deep.
