Lard makes the best tortillas, period. If you can get it, use it. Shortening is second best, oil works but they won't be as tender.
If your tortillas are tough, you kneaded too long or the dough didn't rest enough. Let it rest and be gentle.
If they shrink back when you roll them, walk away for 5 minutes. The gluten needs to relax.
The skillet should be hot enough that a drop of water sizzles and evaporates immediately. Too cool and they won't puff; too hot and they burn before cooking through.
Make a double batch and freeze the extras between sheets of parchment paper. Thaw on the counter for 10 minutes or microwave 15 seconds.
Homemade tortillas are best the day they're made, but they keep 3-4 days in a zip bag on the counter.
